This is a somewhat healthier reworking of a recipe that my Grandma and I used to make when I was little.
Boil the following togeether for 5 minutes:
1/2 c carob powder
1/2 tsp salt
1 tsp vanilla
1/2 c butter
1/2 c milk
1 1/2 c demerara sugar
then add the following to the first mixture and combine well:
3 c oatmeal
1 c coconut
Drop by teaspoons onto waxed paper to cool and set.
