Whole Wheat Bread

From Make A Treat With Wheat by Hazel Richards

 

Makes 2 large loaves

 

3 cups milk

 

5 TBSP oil or melted shortening

5 TBSP honey or molasses or brown sugar

4 ½ tsp salt

 

2 TBSP dry yeast

¾ cup warm water

1 tsp sugar

 

9 ¼ to 10 cups flour

 

 

Scald the milk.

While the milk is hot, add the oil, honey, and salt.

Set aside until it cools to 95F to 110F.

 

Dissolve the yeast in the water and add the sugar.

 

Mix the cooled milk mixture into the yeast mix and stir.

 

Gradually add the flour.

 

Knead for 10 minutes.  Place in a greased bowl and cover with a damp cloth.  Place the bowl in a warm place and let it rise until it doubles in bulk.

 

Knead slightly.  Form into loaves.  Place into well greased pans.  Let rise until they almost double in bulk.  If the dough more than doubles, reshape and form into loaves again.

 

Bake between 350 and 375 degrees, for 1 hour 20 minutes, or until done.

 

TO USE POWDERED MILK

3 cups of water instead of milk

Stir 1 cup of dry milk powder into flour

 

ALTITUDES OVER 5500 FEET

May need to reduce yeast by half (use 1 TBSP instead of 2)
