Nut Butter Cookies

This is from The Natural Gourmet by Cindy Panton-Goyert.  It was written for peanut butter, but you know how I feel about peanuts, so substitute any nut butter you like.  (It's unfortunate they taste so wonderful made with peanut butter! Yes, I've done them with peanut butter, too.)

1/2 cup butter
6 tbsp honey
2 tbsp molasses
1 egg
1 cup natural nut butter
1 3/4 cup whole wheat flour
1/2 tsp salt
1/2 tsp baking soda
1/2 - 1 cup chopped nuts (optional)

Cream the butter with the honey and molasses, beat in the egg, then add the nut butter.  Separately mix flour, salt and baking soda.  Stir into nut butter mixture.  Add the chopped nuts and chill for several hours.  Roll into balls, place on lightly buttered cookie sheet and flatten with a fork dipped in flour.  Bake at 350F for 8 - 12 minutes.
