No milk, eggs, corn, wheat, rye, citrus
1 ½ c sifted unbleached flour, or 2 c scotch-style oatmeal or oat flour
1 tsp baking soda
½ tsp salt
2 tbsp carob powder
1 tsp pure vanilla extract
1 tbsp apple cider vinegar
5 tbsp butter or allowed margarine, melted
½ c honey
1 c water
Combine all dry ingredients. Add vanilla, vinegar, and melted butter/margarine. Mix well. Add honey and water. Mix until thoroughly blended. Batter will be thin. Pour into lightly greased and floured 8-inch square pan. Bake 40 – 45 minutes at 350F until a toothpick inserted in the center comes out clean. Cool in pan for 10 minutes. Carefully remove from pan.
May also be used to make 16 cupcakes. Bake at 375F for 15 minutes or until toothpick inserted in center comes out clean.
